Ingredients
1 quantity basic Dough Dough Dough
3 tablespoons melted Butter Butter Butter
1/3 cup chopped Raisins Raisin Raisin
1 1/2 teaspoons Cinnamon Cinnamon Cinnamon
2 tablespoons Brown Sugar Sugar Sugar
1/2 teaspoon grated Lemon Rind Lemon Lemon

MethodKnead the yeast dough until smooth. Roll to a 23 x 30cm rectangle.
Brush with melted butter. Combine remaining ingredients and sprinkle evenly over the top.
Starting at the shortest edge, roll up and seal the edge. Place in a greased 23 x 15cm loaf tin. Cover and leave in a warm place until double in bulk.
Bake at 180 deg. C for about 40 minutes until golden and cooked through. Remove from the tin and cool.
If liked, top with a thin lemon glaze and sprinkle with finely chopped almonds or walnuts.
