Method

Chop fruit and place in a basin, pour over brandy, mix well, cover and stand overnight.

Cream butter with sugar until like whipped cream, add grated fruit rinds, mixed with a little orange juice, essences, marmalade or jam and melted chocolate; mix thoroughly. Drop in eggs one at a time, beating well after each addition. Fold in sifted dry ingredients alternately with the prepared fruits; mix well.

Spoon mixture into a deep nine-inch cake tin which has been lined with one thickness of white paper and two thickness of brown paper. Cook in slow oven (120-140C, 250-300F) for about four hours or until tested and cooked. Remove from oven, spoon over extra brandy, allow to cool in tin then remove brown paper layers, wrap in foil and stow in cool place until ready to decorate.

Decorate with marzipan fruits, or almond paste and plastic icing, ribbon and sugar bells - or just leave plain and put on a cake ruffle.
