Caramel Parfait
Preamble
Ingredients3/4 cup granulated Sugar 3 tablespoons Water 1/4 cup Water 5 Eggs 1/4 cup Castor Sugar 1/2 cup Cream 1 tablespoon Gelatine Juice of one Lemon Extra Cream for decoration |
MethodPrepare the caramel by dissolving the granulated sugar in 3 tablespoons of water over heat without stirring. The sugar must dissolve before the water boils. Boil gently until a rich brown colour is obtained. Carefully add 1/4 cup of water and stir until the caramel is melted. Put the pan in a bowl of water to cool. Put the eggs in a basin with the castor sugar and beat until a thick mousse-like consistency is obtained. Lightly whip the cream and fold into the egg mixture along with the cold caramel. Make up lemon juice to 1/4 cup with water (if necessary) then heat and sprinkle over the gelatine powder. Stir briskly until dissolved and then add to the caramel mixture. When the mixture is thoroughly blended, pour into parfait glasses and leave in the normal part of the refirgerator to set. To serve, decorate with whipped cream. |
