Method

Toast the hazelnuts under the grill until browned and the skins start to peel away. Place in a paper bag and rub to remove skin. Finely chop the nuts.

In a basin, combine the buttermilk, sugar, nuts and lemon rind.

Soak the gelatine in cold water for 10 minutes. Drain and place in a small bowl over hot wter. When melted, stir in some of the buttermilk and return to the bulk.

As buttermilk mixture begins to set fold in the cream whipped until it holds its shape. Turn into a 3 pint serving dish and leave for 1 hour; do not over-chill or make a day ahead. Decorate with sugar cone. Serve sauce with each portion.

Cherry Sauce: Bring jam and water to the boil, fast boil for 5 minutes. Strain and rub through a nylon sieve. Blend arrowroot with lemon juice and stir into cherry juice, bring to the boil., stirring, cook until clear. Cool.
