Apples Porcupine
Preamble
Ingredients5 medum sized Apples 1/4 cup Honey 2 teaspoons grated orange Rind 1/2 cup Sultanas 3 Egg Whites 6 level tablespoons Castor Sugar 1 cup blanched Almonds |
MethodPeel the apples half way down the sides (this prevents the apples from breaking up during the cooking time), remove the cores and fill the centre with honey, sultanas and orange rind. Stand the apples in a greased oven proof dish, cover tightly with foil and place in a moderate oven 350 deg. for 30 minutes, remove from the oven and allow to become cold. About half an hour before you wish to serve them, beat the egg whites stiffly and gradually add the castor sugar, beating to a stiff meringue mixture. Pipe over the top of the apples, or spoon the mixture if preferred, the meringue will hold tightly to the apple providing the apple is cold. Blanch the almonds by placing them in cold water and bring to the boil, strain and lift off the skins. Cut the almonds into sliver pieces and place in the meringue topping. Return to a moderate oven 350 deg. for a further 25-30 minutes to reheat the apples and brown the meringue. |
