Apple Upside Down Cake

Preamble

Method

Cream butter with the half cup of sugar. Add vanilla essence, and well beaten egg. Sift together flour, baking powder and salt. Add this to the butter and egg mixture, moistening with the milk.

Thickly butter the bottom and sides of a square or oblong baking dish or strong cake tin. Pare, quarter and thinly slice apples. Mix together the quarter cup of sugar with the powdered cinnamon. Spread sufficient apple over the bottom of the dish to make a single layer of overlapping slices. Dust with half the cinnamon. Put another layer of apple, and then the rest of the cinnamon. Now turn in the cake mixture, smoothing with a knife if the batter is too thick to lie evenly. Bake in a very moderate oven for about 45 minutes.

When cooked, loosen the sides of the cake, and turn it out carefully on to a dish so that the bottom with its layer of transparent apple slices is uppermost. Serve hot with whipped cream, or with a vanilla flavoured sauce made by beating one part of butter with two parts of castor (or icing) sugar until smooth and creamy. Add vanilla essence.
