Mini Pizza
Ingredients
12 oz Plain Flour Cornflour Cornflour
1 oz Yeast Yeast Yeast
2 oz Butter Butter Butter
2 Eggs Egg Egg

7 oz sliced Onions Spring Onion Spring Onion
1 tablespoon Olive Oil Olive Oil Olive Oil
10 Black Olives halved Olive Olive

MethodMix flour and butter together; dissolve yeast in a little water and add to dough with beaten eggs, a pinch of salt and knead thoroughly, adding extra water as necessary until dough is thick and smooth. Place basin in a warm place, cover with a cloth and stand for 2 hours until dough rises. Cook onions until soft in heated oil, then mix into a puree. Roll the dough to fit one large flan, or two smaller flans, spread with onion puree and arrange olives and anchovies over the top. Bake in a moderate oven (350 degrees) for 20-30 minutes (until golden brown) and serve immediately.
