Groundnut Stew (Ghana)
Ingredients
2 lbs Beef Beef Beef
3 chopped Onions Spring Onion Spring Onion
3 chopped Tomatoes Tomato Tomato
2 pints Stock or Water Stock Stock
1/2 lb toasted Peanuts Peanut Peanut
Salt Salt Salt
Red Pepper Capsicum Capsicum
4 ground Cloves Cloves Cloves
3 Eggplants Aubergine Aubergine
3 tablespoons Oil Oil Oil
1 tablespoon Peanut Butter Peanut Peanut

MethodCut beef into one inch squares and brown in oil and peanut butter. Add chopped onions and brown. Add chopped tomatoes and stock. Stew for half an hour then add toasted peanuts (minced). Stir to a smooth consistency and season with salt, red pepper and ground cloves.
When almost cooked, add eggplants (diced).

Remarks Serve with side dishes of raw onion rings, banana slices and red pepper, chutney, chopped toasted peanuts.
