Groundnut Stew (Ghana)



Ingredients

2 lbs Beef

3 chopped Onions

3 chopped Tomatoes

2 pints Stock or Water

1/2 lb toasted Peanuts

Red Pepper

4 ground Cloves

3 Eggplants

Aubergine Aubergine

3 tablespoons Oil

Oil Oil

1 tablespoon Peanut Butter

Method

Cut beef into one inch squares and brown in oil and peanut butter. Add chopped onions and brown. Add chopped tomatoes and stock. Stew for half an hour then add toasted peanuts (minced). Stir to a smooth consistency and season with salt, red pepper and ground cloves.

When almost cooked, add eggplants (diced).


Remarks
Serve with side dishes of raw onion rings, banana slices and red pepper, chutney, chopped toasted peanuts.
