Ingredients1 rack of Lamb 6 Loins Of Lamb Caul Fat 100 grams chopped Pistachio Nuts 100 grams Vegetable Brunoise (Fine Dice Carrot, Onions, Zucchini, Celery, Garlic 1/2 litre Game Stock 1/4 litre Demi Glace 5 cl Cognac |
Method1 cutlet stuffed (on one side with chopped pistachios and on other side with brunoise of vegetable, then wrapped in caul, cooked slowly in clarified butter. Loin cleaned - sealed up and kept pink. Sauce poivarde: game base, slightly creamed. game stock, demi glace and cognac. Serve with cherry tomatoes stuffed with veg. brunoise Pomme Dauphin Witlof Meunier Purple Basil. |
