Method

1 cutlet stuffed (on one side with chopped pistachios and on other side with brunoise of vegetable, then wrapped in caul, cooked slowly in clarified butter.

Loin cleaned - sealed up and kept pink.

Sauce poivarde:

game base, slightly creamed.

game stock, demi glace and cognac.

Serve with cherry tomatoes stuffed with veg. brunoise
