Carbonade Of Beef


Preamble

1 kg Stewing Steak

250 ml dark Beer

Bouquet Garni (Parsley Stalks, Thyme, Bay Leaf) and 1 Bay Leaf

Seasoned Flour

Method

Fry the onions in a little oil. Cut the meat into pieces, dredge with seasoned flour. Seal the meat on all sides in another pan and add it to the onions. Pour the beer over the meat with the seasonings and tomato paste, cover and cook in the oven at 180C, 350F for two hours. Add a little stock if it looks as if it needs more liquid.
