Gammon And Apricot Pie (Buckinghamshire)

Preamble
"Gammon rashers and steaks are cut from the tender, lean middle part of the whole leg. The association of ham and gammon with apricots is centuries old."

Ingredients

8 Gammon Rashers (1 inch thick)

Bacon Bacon

2 oz Butter

Butter Butter

1/2 lb dried, soaked Apricots

Apricot Apricot

Pepper

Pepper Pepper

1 oz Sultanas

Sultanas Sultanas

1/2 pint Brown Stock

Stock Stock

2 lb sliced Potatoes

Potato Potato

Method

Lightly fry the gammon rashers on both sides in half the butter; arrange in a 3 pint pie dish and cover with the apricots. Sprinkle with pepper and sultanas. Pour the stock over the gammon and cover with overlapping slices of potato. Brush with melted butter.

Cover with foil and bake in the oven for 1 hour; remove the foil and continue baking for a further 30 minutes to brown the potatoes.
