Method

Marinate the lamb fillets in soy, garlic, sesame oil and hot red chilli. Cut into bite size. Cook in a wok in hot oil.

Boil vinegar, bay leaves, peppercorns and shallots.

Strain.

Mix in egg yolks and butter.
