Sailor's Stew
Ingredients2 lbs Stewing Steak or gravy beef 1 oz Flour 1-2 oz Butter 4 medium Potatoes sliced 2 Onions sliced 1/4 pint Red Wine Salt And Pepper Parsley |
MethodCut the meat into 1 inch cubes, roll in seasoned flour. Sear in the butter and set aside. Brown the potatoes in the butter and set aside. Do the same with the onions. Arrange alternate layers of potato, meat and onion in casserole. The first and last layer should be potato. Sprinkle each layer with salt and pepper. Rinse out the frying pan (deglaze) with the wine and 1/4 pint water, pour into casserole. Cover and cook slowly for 2 hours or longer (if using gravy beef, allow at least 3 hours). Garnish with chopped parsley. |
