Method

Cube pork fillets and dust lightly with flour. Sizzle them in butter, but do not brown - you'll spoil the colour scheme. Pour in a wineglass full of dry vermouth, and flame. You may well be surprised at the volatile qualities of this vino.

Now stir in two tablespoons of that inestimable Grey Poupon Mustard of Dijon and just enough chicken stock to keep everything juicy.

Simmer till the meat is tender, salt and pepper modestly, and when you estimate that everybody will have finished their martinis within 10 minutes, stir in a carton of thick, sour cream. That's all, except for the squash and a scatter of chives.
