Ingredients
1 Veal Kidney (Offal) Veal Veal
2 teaspoons Butter Butter Butter
1 dessertspoon Corn Flour Cornflour Cornflour
1/4 cup Gin Egg Egg
1 teaspoon Mustard Mustard Mustard
Salt And Pepper Salt and Pepper Salt and Pepper

MethodClean and cut the kidney in dice.
Put knob of butter in a cocotte, lightly brown kidney.
Pour gin into pan (remove blood first). Light.
Cover cocotte and remove from fire.
Make a sauce with rest of butter, corn flour mixed with the blood, then mustard, salt and pepper.
Pour mixture in cocotte and finish cooking without letting it boil.
