Tomato Chutney 2



Ingredients

1 lb cooking Apples

Apple Apple

2 lb fresh or tinned Tomatoes

Tomato Tomato

2 oz Ginger

Ginger Ginger

1 oz Garlic

Garlic Garlic

1 teaspoon Salt

Salt Salt

1 teaspoon Chilli Powder

Chilli Chilli

1/2 pint Vinegar

Vinegar Vinegar

Method

Peel and core the apples. Cut the apples and tomatoes in small pieces. Pound the ginger and garlic together. Mix with the apples and tomatoes in a pan. Sprinkle with salt and chilli powder and cover with vinegar. Cook until a thick pulp forms.

Cool and bottle.

This recipe can be supplemented by adding the following ingredients to 2 lbs tomatoes.

1 small onion, finely chopped

1 dessertspoon raisins or sultanans

1 tablespoon finely chopped ginger

2 cloves garlic, finely chopped

8 cardamoms, skinned and ground

6 cloves

1 teaspoon chilli powder

2 bay leaves

1 1/2 teaspoons salt

1 cup soft brown sugar

1/2 pint vinegar

Mix the ingredients and cook as above. Bottle when cool.
