4 tablespoons soft Brown Sugar Sugar Sugar
3 tablespoons Vinegar Vinegar Vinegar
Juice of 1 Lemon Lemon Lemon

MethodBreak the cauliflower into small pieces, wash and put in a little water. Bring to the boil, drain and cool. Mix in a bowl with the ginger.
Sprinkle on the salt, turmeric, chilli, mustard seeds and garam masala. Mix well. Dissolve the sugar in vinegar and lemon juice and boil together for a few minutes. Pour over the cauliflower. Mix again and put into jars. Keep in a warm place for a few days.
Carrots, parsnips, turnips and cabbage can be pickled in the same way.
