1 1/2 lb Pineapple peeled and cored
1 oz Salt
8 cloves Garlic
3 oz Green Ginger
1/2 lb Raisins
7 oz Sugar
1/4 teaspoon ground Nutmeg
1 pint Vinegar
Chop pineapple, sprinkle with salt and leave 1 1/2 hours.
Mince garlic and ginger and chop raisins.
Drain pineapple and rinse in a little vinegar.
Mix aromatics with pineapple.
Simmer vingear with sugar and nutmeg for 10 minutes then add pineapple.
Cook until reduced to a medium thick paste
Cool and bottle.
