Chutney Kheera


Preamble
Translates as 'cucumber chutney'


Ingredients

1 lb peeled Cucumbers

1 1/2 teaspoons Salt

1 chopped Red Pimento (fresh or tinned)

2 teaspoons chopped Fenugreek Leaves or 1/2 teaspoon Fenugreek Seeds (ground)

1 tablespoon Coriander Leaves or Parsley

Method

Cut up the cucumber and salt well. Leave to stand for 1 hour then rinse off the salt and drain. Prepare rest of ingredients. Pound or blend cucumber with them, using as much lime or lemon juice as required to make a thick puree. Chill well and mix with chopped coriander leaves or chives before serving.
