Chutney Kashmiri
Ingredients
2 lb Brown Sugar Sugar Sugar
2 quarts Vinegar Vinegar Vinegar
2 lb Green Ginger Ginger Ginger
1 1/2 lb Garlic Garlic Garlic
1/4 lb Red Peppers Capsicum Capsicum
1/2 lb Mustard Seed Mustard Mustard
1/4 teaspoon ground Saffron Saffron Saffron
1 1/4 tablespoons Cayenne Pepper Cayenne Pepper Cayenne Pepper

MethodMix sugar with sufficient vinegar to dissolve it (1 1/2-2 pints). Pound or mince all the ingredients separately. Mix together and moisten with about 2 pints vinegar. Add the sugar and vinegar syrup and blend to a paste. Put aside for 3-4 weeks before using. Quantities of vinegar may vary slightly, but use enough to produce the usual chutney consistency.
