Carrot Pickle
Ingredients
2 lb Carrots Carrot Carrot
Salt Salt Salt
Vinegar Vinegar Vinegar
3 tablespoons Mustard Seeds Mustard Mustard
12 Green Chillies Chilli Chilli
4 oz Ginger sliced Ginger Ginger
4 cloves Garlic chopped Garlic Garlic

MethodCut carrots in long slices and cut each slice in half. Put in a dish and sprinkle with salt. Leave in a warm place for three days. Wash in vinegar and put in a mixing bowl. Add the mustard seeds, whole chillies, ginger and garlic and mix well. Put in jars and cover the pickle with vinegar. Screw up and shake well. Leave in a warm place for a few days.
