Carrot Chutney



Ingredients

2 lb Carrots

1 tablespoon Salt

2 teaspoons finely chopped Ginger

Ginger Ginger

1 tablespoon Black Peppercorns

Pepper Pepper

1 cup soft Brown Sugar

Sugar Sugar

1/2 pint Vinegar

Vinegar Vinegar

Method

Wash, scrape and trim the carrots. Cut in small pieces and mix with the rest of the ingredients in a pan. Boil gently till the carrots are tender. Cool and bottle.
