Carrot Chutney
Ingredients
2 lb Carrots Carrot Carrot
1 tablespoon Salt Salt Salt
4 cloves Garlic Garlic Garlic
2 tablespoons Mustard Seeds Mustard Mustard
2 teaspoons Cumin Seeds Cumin Seed Cumin Seed
2 teaspoons finely chopped Ginger Ginger Ginger
1 tablespoon Black Peppercorns Pepper Pepper
1 cup soft Brown Sugar Sugar Sugar
1/2 pint Vinegar Vinegar Vinegar

MethodWash, scrape and trim the carrots. Cut in small pieces and mix with the rest of the ingredients in a pan. Boil gently till the carrots are tender. Cool and bottle.
