Aubergine Chutney from Mietta's Recipe Collection

1 large Aubergines

2 Green Chillies seeded and finely chopped

1 Onion finely chopped

Spring Onion Spring Onion

1/2 cup grated Coconut

Coconut Coconut

1 teaspoon Salt

Salt Salt

Juice of 1 Lemon

Lemon Lemon

Roast or grill the aubergine till the skin is burnt and the flesh is tender. Peel and mash. Mix with the rest of the ingredients.
