MethodWitlof blanch first in water, salt, lemon and sugar - not too soft. Leave in water. Cool and dry on cloth. Then allow to turn golden in butter.
Trim and blanch remaining vegetables, then glaze in fresh butter.
Roast rabbit saddle and herbs - add to pan, batons of carrots, celery, leeks, onions.
8 minutes.
Bone 2 fillets - replace carcase in pan and veg and juice and take out kidneys.
Add a little white wine and reduce.
Add cream and let simmer 10 minutes.
Sieve and thicken with mustard (1 tablespoon) - do not boil.
Livers - cook, toss in pan quickly.
Slice fillets in aiguillets.
Arrange saddle on plate overlapping on 1 side.
Veg/witlof/kidneys and liver.
our sauce all round the fillets - but not over.
