Wakefield Rabbit
Preamble Jointed rabbit with a crisp finish of herb-flavoured crumbs can be served with a thickened gravy or a sharp sauce.
Ingredients
2 jointed Rabbits Rabbit Rabbit
Seasoned Flour Cornflour Cornflour
2 Eggs Egg Egg
4 oz dry Breadcrumbs Bread Bread
1 dessertspoon Mixed Herbs Herb Herb
Cayenne Pepper Cayenne Pepper Cayenne Pepper
Salt Salt Salt
Lard or Dripping Lard Lard

MethodCoat the washed and dried joints with seasoned flour. Dip in the beaten eggs and coat with breadcrumbs mixed with herbs. Place the prepared joints in a greased roasting tin and sprinkle with cayenne and salt. Roast in the oven, basting occasionally with dripping or lard, for 1 1/2 to 2 hours.
