Big Catch Casserole
Ingredients
4 oz wide Noodles Noodles Noodles
1 1/2 oz Butter Butter Butter
3 tablespoons Flour Cornflour Cornflour
2 1/2 cups Milk Milk Milk
16 oz can Salmon Salmon Salmon
1/2 teaspoon Lemon Rind Lemon Lemon
1 tablespoon grated Cheese Marscarpone Cheese Marscarpone Cheese
1 dessertspoon finely chopped Onion Spring Onion Spring Onion

10 oz packet frozen Peas Snow Peas Snow Peas

MethodCook noodles in boiling salted water until tender. Drain. Melt butter in saucepan, add flour and cook few minutes. Gradually stir in milk and liquid from salmon, cook until sauce boils and thickens, stirring constantly. Add lemon rind, grated cheese and onion. Season with salt and pepper. Stir in flaked salmon, peas and noodles. Spoon into casserole and heat in moderate oven 15-20 minutes.
Serve with the noodles
