Nepali Spiced Eggs
Ingredients
2 tablespoons Ghee Ghee Ghee
1 teaspoon Cumin Powder Cumin Seed Cumin Seed
4 Cardamoms skinned and ground Cardamom Cardamom
1/2 teaspoon Paprika or Chilli Powder Paprika Paprika
2 cup Yoghurt Yoghurt Yoghurt
2 tablespoons chopped Coriander Leaves Coriander Coriander
Juice of 1 Lemon Lemon Lemon
8 hard-boiled Eggs halved Egg Egg

MethodHeat ghee and lightly fry the spices for a few minutes. Beat the yoghurt till smooth and stir in the coriander leaves, lemon juice and fried spices. Put in the eggs and mix well. Serve cold as a salad, with chopped tomatoes, or as a side dish or chutney (achar) for a curry.
