Savory Egg And Bacon Slice
Ingredients
1 lb Shortcrust Pastry Short Pastry Short Pastry
4 rashers Bacon Bacon Bacon

1/4 pint Cream Cream Cream
2 Tomatoes Tomato Tomato
1 tablespoon chopped Parsley Parsley Parsley
2 oz grated matured Cheese Marscarpone Cheese Marscarpone Cheese

A few grains of Cayenne Pepper Cayenne Pepper Cayenne Pepper

MethodDivide the pastry into two parts, and use one part, thinly rolled, to line a 9 inch square tin. Cover with a layer of sliced tomato.
Cut the bacon into small pieces and heat in a small saucepan until the fat melts. Add the diced onion and cook with the bacon fat until transparent. Cover the tomatoes with the bacon and onion.
Beat the eggs, cream, salt and cayenne with the chopped parsley and pour over the other ingredients. Cover with the remaining pastry and bake in a hot oven 400 deg. for 20 minutes. Sprinkle the top of the pastry with the cheese, and return to the oven for a further 20-25 minutes at 350 deg.
Serve hot with lashings of rich tomato sauce, made by boiling sliced peeled tomatoes, a clove of garlic, and 1 teaspoon Worcestershire sauce for 15 minutes. A few drops of vinegar will add a zest to the tomato sauce.
Serve cold, cut in squares or slices and with a tossed salad or coleslaw.
