My Favourite Breakfast Dish
Ingredients
4 hard-boiled Eggs Egg Egg
1 teaspoon Anchovy Paste Anchovy Anchovy
8 Croutons (fried bread) Croutons Croutons
2 dessertspoons Butter Butter Butter
Pinch Cayenne Pepper Cayenne Pepper Cayenne Pepper

MethodBoil the eggs hard, cut in halves and remove yolks. Cut a small piece off the ends, so that the half eggs will stand upright. Put the yolks into a basin with the butter, anchovy paste and cayenne, and beat until quite smooth. Fry the bread in butter, and drain well. Spread with a little of the mixture. Fill up the whites with the mixture piling it high in the centre, garnish with small sprigs of parsley.
