Preamble Eggs are one of the most easily digested fods that we have, here is an attractive way of serving them.

Large firm Tomatoes Tomato Tomato
Breadcrumbs Bread Bread
Butter Butter Butter
Bacon Bacon Bacon
Salt And Pepper Salt and Pepper Salt and Pepper

MethodChoose large firm tomatoes and scoop out the centres. Break one egg carefully into each tomato, sprinkle with salt and pepper, cover with buttered breadcrumbs and lay a slice of bacon on each side. Bake in moderate oven for 30 minutes, turn the bacon over once during cooking. Place under a broiler (grill) for 1 minute to crisp and brown bacon and crumbs.
