La Bagna Cauda

Ingredients

3 oz Olive Oil

Method

Heat the butter and oil, put the anchovies cut in pieces and the garlic finely sliced. Simmer for 10 minutes. The sauce is served in a dish kept hot over a spirit lamp, and with it goes a dish of raw cardoons (celery can replace them), raw sliced cabbage, and pimentos both cooked and raw. Sliced white truffles are sometimes added to the sauce, and occasionally even cream as well.

Remarks
Appeared on menu: Fritto Misto di Verdure $3.00 (variety of seasonal vegetables deep fried and served with a sauce of olive oil, garlic, anchovies and butter) This sauce is quite clearly bagna cauda.
