Apple And Celery Stuffing
Preamble
Ingredients
2 oz chopped Bacon Bacon Bacon
1 oz Butter Butter Butter
1/2 lb chopped Onion Spring Onion Spring Onion
2 oz chopped Celery Celery Celery
1 lb peeled, cored and chopped Cooking Apples Apple Apple
3 oz white Breadcrumbs Bread Bread
1 teaspoon chopped Parsley Parsley Parsley
Sugar Sugar Sugar
Salt And Pepper Salt and Pepper Salt and Pepper
1/2 beaten Egg Egg Egg

MethodFry the bacon in butter for 2-3 minutes, reserve.
Cook the onions and celery for 5 minutes in the same pan with the butter and bacon fat, add the apples and cook for a further 2-3 minutes.
Return the bacon to the pan with the the onion, celery and apple mixture. Add the breadcrumbs and parsley. Season with sugar, salt and pepper.
Cool and add the beaten egg.
